Margarine's "good" fats. Margarine's vegetable oils contain unsaturated fats, which are divided into polyunsaturated and monounsaturated fats. When used as a replacement for saturated fat, they help lower LDL cholesterol—the "bad" cholesterol that clogs arteries. Spreadable can be created in lots of different ways. Today, it’s often made by blending traditional churned dairy butter with vegetable oils. You can use unsalted butter at any time and add a pinch of salt as needed, but unsalted butter is most commonly called for in baking recipes. If you’re following an American recipe, you may find an ingredient called “shortening”. While you can find an equivalent here in the UK, it’s much easier to substitute it with butter. Manufacturers and home chefs make butter by churning milk or cream to separate fat from the buttermilk. They also sometimes add salt and food coloring.

Salt (and season) to taste: Do you like your butter salted, or not? I prefer baking with unsalted butter (to best control the salt level in the recipe) and using salted butter as a condiment: on toast, biscuits, scones, pancakes, and slices of crusty bread, to name just a few favorites. When you make your own butter, you can add just the amount of salt you prefer. (To replicate the salt level of store-bought butter, use a scant 1/4 teaspoon table salt per 4 ounces (113g) of homemade butter.) This is why salt is often used as a finishing touch on dishes, or as a seasoning for meat and vegetables. On the supermarket shelves, you’ll often find a sprinkle of salt has been added to the butter for an extra zap of flavour – as is the case with Anchor Original. Journal of Dairy Science: “Conjugated linoleic acid content of milk from cows fed different diets.” Opt for olive oil, canola (rapeseed) oil or other vegetable oils high in monounsaturated or polyunsaturated fat when cooking, as they have no salt and less saturated fat than butterI placed the bowl in the sink and rinsed the butter under cold ice water. After rinsing, I discarded the water in the bowl, squeezing and gently kneading the ball a few times. I repeated this process about six times until the water ran clear and the butter didn’t release any liquid when I squeezed it. All in all, it took about five minutes. Step 4: Pat dry If you want to replace oil in a baking recipe (such as in a cake), melt your butter first in a pan or in the microwave and add it to the mixture as guided for the oil. Is salted or unsalted butter healthier? Heavy cream, whipping cream, or heavy whipping cream are all suitable choices for making homemade butter. Heavy cream, with the highest percentage of butterfat, will yield the most butter; lower-fat whipping cream will yield less. To make things even more complicated, salted butter has more water than unsalted butter and is usually not as fresh as unsalted butter. Salt is a natural preservative and gives salted butter a longer shelf life. This can actually change how your baked goods turn out.

Straker, brought up on a smallholding in Herefordshire, knows his butter. He has just introduced a range sold in Ocado as well as Planet Organic and Milk & More, with one per cent of turnover going to farming charities. Most spreadable butters are typically a mix of butter and vegetable oil. This gives you about half the saturated fat of butter. The reason that butter ends up yellow is because you’re concentrating all the fat that’s present in the cream,” Zak notes.

Anchor

Marks & Spencer Softer Butter described as 'slightly salted' is actually saltier than its own Salted Farmhouse Butter (1.75g per 100g vs. 1.5 per 100g) FoodData Central: “Butter, without salt,” “Butter, salted,” “Grass-fed pasture-raised Irish butter.” Healthy diets are tasty diets and it's easy to make things that are normally a little boring palatable by adding a little butter.
