The Macallan 12 Years Double Cask is a testament to the distillery's expertise in crafting fine single malt whisky. Its aroma entices with a delightful combination of malt, honey, apricot, and subtle hints of brown sugar, spice, and dried fruit. As you take a sip, the palate unfolds to reveal flavours of honey-infused cereal, apricot, and a touch of copper, complemented by zesty orange peel and spice. The finish is medium in length, leaving behind a satisfying blend of dry maltiness, spice, and dried apricots. Unlike The Macallan, the Lagavulin 16 Years 43% is considered to be a whiskey for experts with complex flavour and a long, dry finish. The Essence of Tradition and Elegance

Flavour-wise, the Double Cask is richer and rounder than the Triple Cask due to the 100% sherry maturation. However, the latter has a lighter and brighter character due to the bourbon influence. The Macallan Estate area in the Speyside region was formerly known as Maghellan—a portmanteau of ‘magh’ and ‘Ellan’. ‘Magh’ translates to ‘fertile ground’ in Gaelic, and ‘Ellan’ is taken from St. Fillan, a monk closely connected to a church in the estate. On the tongue, the caramel and honey notes take over with an indulging creaminess that blends harmoniously with raisin and citrus. The sip finishes dry with lingering butterscotch and oak, leaving behind a comforting warmth while sustaining a medium length. What is the difference between Macallan 12 Double Cask and Triple Cask?

Macallan was founded on a plateau above the river Spey in North East Scotland in 1824, and quality has been at the centre of the brand ever since. The Macallan was in fact one of the first distilleries in Scotland to be legally licensed, and since then the brand has built a reputation as one of the world's leading single malt whisky makers. The distillery is surrounded by a 485-acre estate, and the whisky really captures the atmosphere of the beautiful Scottish landscape and history of creating world-renowned whiskies. The 12 Double Cask has made its way into Macallan’s core range of single malt Scotch whiskeys after its release in 2016. How it is made Macallan whisky derives its iconic colour from the wooden casks in which it aged. Each tree used to make the casks will impart a slightly different flavour, making the individual bottles of Macallan whisky truly unique.

First, barley grains undergo the malting process to activate enzymes needed for fermentation. The Macallan uses Minstrel barley grown in their distillery’s estate to ensure the highest quality grains. But in the “what’s available to the average modern buyer” realm of conversation they’re still putting out some good whisky — that’s undeniable. And while the pricing of said whisky is a whole other conversation, what they’re doing today from a what’s-in-the-bottle perspective is still quite nice and it’s through that lens I’m approaching this Macallan 12 Years Double Cask review… and every other review I do. Lastly, the colourless and concentrated soon-to-be scotch is reduced to its maturing strength of 40% ABV and filled into oloroso sherry-seasoned oak barrels for ageing. This process ultimately gives the 12 Double Cask its unique, signature flavour straight out of the bottle. Tasting notes Another good way to sample the Macallan 12 Double Cask is by drinking it straight at room temperature. This method allows you to discover some of the delicate and complex flavours of the scotch that are undetectable when chilled. After fermentation, the alcohol is distilled in copper and spirit stills to extract the “heart” of the distillate. The 12 Double Cask scotch is produced in stills smaller than the average size, which allows the copper still to impart more of its flavours onto the spirit. This practice also gives the master distiller better precision in deciding the cut ratio that runs off the still. Triple cask whiskeys typically have more complex flavour profiles, having undergone an additional course of maturation from double cask whiskeys.
